Joseph Brot is a bakery and bistro chain baking organic bread by hand from grain grown in Austria's Waldviertel region, using long sourdough fermentation of a day or more for flavour and digestibility. Its Vienna bistros, including one at Kirchengasse 3, serve this bread alongside other food, and the company also runs a project reviving old, regional grain varieties.
